I hope you had a nice holiday weekend! We spent ours at our friends’ Lake House on Lake Keowee in South Carolina. Our days were spent on the boat or in the water lounging on rafts. I absolutely loved waking up to their waterfront view. Although I am years from retirement, it certainly gives you food for thought as to where you want to retire!
Last week I shared my Fabulous Feta Dip recipe that I took to a party. I also took this Texas Caviar dip and the two paired nicely together. If you love citrus flavors like me, you will love my version of Texas Caviar.
My Version of Texas Caviar
Texas Caviar is a bean dip that has been around for a long time. It’s one of the healthiest dips you can make. The original recipe calls for bottled Italian dressing. I much prefer using fresh lime juice, olive oil and garlic for my dressing. The lime juice brightens the dish and adds a fabulous citrus flavor. A perfect pairing with salty tortilla chips.
- 2 cans black eyed peas, rinsed and drained
- 2 cans black beans, rinsed and drained
- 1 bag of Birdseye Steamfresh frozen corn
- 1 red pepper, chopped
- 1 jalapeño, minced
- 1 medium purple onion, chopped
- 1 bunch green onions, sliced
- ½ cup chopped parsley
- 1 garlic clove, mashed
- ⅓ cup lime juice
- ⅓ cup extra virgin olive oil
- salt and pepper to taste
- Tostitos Scoops
- Cook corn in microwave according to package directions. Open bag and let cool.
- Add rinsed beans and chopped vegetables to a bowl. Add cooled corn.
- Mash one garlic clove with a little salt. Add lime juice. Whisk in olive oil. Pour over beans and vegetables and mix well. Refrigerate for a few hours to marinate.
- Serve with Tostitos Scoops.
Recipe Notes
The Birdseye Steamfresh corn is my favorite. There are no added ingredients. Just corn.
The best way to serve Texas Caviar is with Tostitos Scoops. It is so much easier to scoop up the bean dip with this type of chip.
