We had perfect weather this past weekend for Easter.  Blue skies, flowering trees and temperatures in the high 60’s/low 70’s.  Can’t believe it’s March!  I hope your weekend was enjoyable too.

If you are like me, you have a lot of leftover ham!  Even though I sent some home with my guests, I still have plenty.  Here are three links for leftover ham inspiration.

One that I want to do this week is make Cuban Sandwiches.  My recipe of the week features one from Alton Brown.

Cuban Sandwich

If you have never had a Cuban Sandwich, you will need to make these. It’s a great way to use up leftover ham.  Here’s a recipe from Alton Brown with a slight variation.  Instead of pork, he uses deli turkey.  A true Cuban sandwich has both ham and pork.

In all honesty, I may just forgo the second meat and make these sandwiches with just the ham.  The pickles, mustard and provolone cheese will add plenty of flavor.

I love hot sandwiches and they are so easy to make in my Cuisinart Griddler.  You can also make them in a George Foreman Grill or in a cast iron skillet on the stove with a second cast iron skillet used as a press on top of the sandwich.

I love this bright white kitchen found on the South Shore Decorating Blog.  This smaller kitchen island adds counter space and the bar stools can easily slide under the island to create a workspace.  I’m also a big fan of the gold accents with the gray and white marble.

I came across this article 9 Ways to Make Your Life Better with the Danish Concept of Hygge in Town & Country Magazine.  Frankly, I had never heard of the word Hygge.  Have you?

So what’s the big deal about Hygge and why am I sharing it?    Well, I found it interesting that “this national obsession with all things cozy is credited as one of the reasons why Denmark is always at the top of the list of the world’s happiest countries, despite their infamously miserable winters.”  

I love the positive spin hygge puts on their life. It’s something we should all work at.

I am so thankful that the ice storm that was predicted to hit Columbus never came.  We had a busy weekend with two nights of having guests for dinner.  Friday night I made my tried and true Rack of Lamb.  It’s so easy to prepare and a great entrée for a work night. Last night I tried a couple of new recipes that I will soon share on the blog.
