I don’t know about you but I actually like Mondays, especially after over indulging on the weekend.   It’s nice to get back to the gym and healthier eating.

This week’s Worthy Reads kicks off with a pork tenderloin recipe. Pork tenderloins are usually sold two to a package.   Cook both so you have extras for sandwiches.  It’s so much better than cold cuts which are high in sodium.

This Roasted Pork Tenderloin from Natasha’s Kitchen looks so juicy and tender.  The key is browning it on the stove and finishing it off in the oven.  The spice rub will add plenty of flavor.
