Growing up, my Mom made the best potato salad. It was full of flavor with delicious mayonnaise, celery, dill pickles and onions. Although I still enjoy her recipe, I also love to try new ones; Especially those without mayonnaise which are safer for entertaining outside.
I have found a collection of potato salad recipes to try this summer. The first one featured has a Horseradish Aioli dressing, which is similar to mayonnaise. I couldn’t help myself. The recipe had me at horseradish – – and then I saw the photo. Oh my!

(Hint: If you are serving potato salad with mayo or aioli as in this recipe, place your serving bowl on top of a larger bowl filled with ice to keep it from spoiling outdoors.)
Red White and Blue Potato Salad
I love the color combination for a patriotic red, white and blue potato salad. You can find red and white potatoes at most grocery stores. You may have to venture out to Whole Foods for the blue potatoes. Heather shared in her recipe that you can not only make this potato salad the day before but it will also taste better!
Grilled Potato Salad with Scallion Vinaigrette
The grill marks on these fingerling potatoes make this salad so attractive. I thinly sliced jalapeño pepper will give it a touch of heat.
Texas Style New Potato Salad
If you prefer a heartier potato salad, give this one a try. The grilled purple onion gives it a nice pop of color. This salad has bacon which will add great flavor; however, you can easily leave it out if you prefer a vegetarian potato salad.
German Potato Salad
The only time I don’t watch calories and fat content is when I am entertaining. This recipe for German Potato Salad would be one of those. Once you fry your bacon, you actually add apple cider vinegar, Dijon mustard, and sugar to the leftover hot bacon grease for your dressing. Sounds amazing!
Potato Salad with Bacon and Blue Cheese
This potato salad was on the cover of Bon Appétit in 1990. I made it soon after and loved it. It was my first experiment with a different type of potato salad than my mom’s with mayonnaise and our Lebanese version made with lemon and oil (which I am saving for another post). I just can’t believe that recipe was on the cover 26 years ago!
