Have you ever had to entertain on short notice and need to quickly prepare a company worthy entrée?    Or perhaps you just aren’t in the mood to cook.  I think we have all been there.  Everyone should have some simple recipes in their repertoire that just require a few ingredients and can be made with little effort.  This Pork Tenderloin recipe is one of them.

My sister gave me this recipe years ago.  It only requires three main ingredients.   That’s what I call simple!   Give it a try and let me know what you think.

Easy Pork Tenderloin with Apricot Glaze

Pork tenderloin is a tender cut of meat; however, on its own, it doesn’t have much flavor.  The beauty of pork tenderloin is that it doesn’t take long to cook and can easily be seasoned with other ingredients for added flavor.  This recipe uses apricot preserves and onion soup mix for a delicious glaze.

Easy Pork Tenderloin with Apricot Glaze - takes less than 30 minutes to put it on the table!

Ingredients

Two Pork Tenderloins, silver skin removed

1 Envelope Lipton Onion Soup Mix

1/2 – 3/4 Jar of Apricot Preserves

1/4 Cup Water

Chives for Garnishing

Directions

Spray casserole dish lightly with cooking spray.  Place tenderloins in dish.

Mix onion soup mix, apricot preserves and water in a bowl.

Pork Tenderloin with Apricot Glaze only takes three main ingredients!

Pour over pork tenderloin.

Pork Tenderloin with Apricot Glaze - cooks in 20 minutes!

Bake at 400 degrees for approximately 20 minutes or until internal temperature reaches 145 degrees.

Remove from oven, loosely cover with foil and let sit for 5 minutes before slicing.

Serve with apricot glaze spooned over pork and garnish with fresh chives.

It doesn’t take long to make homemade salad dressings and they taste so much better than store bought!  Click on the link for some delicious and easy recipes.  Most dressings will last for several days so make a larger quantity.  I like storing my dressings in a glass jar.  You just need to shake it and pour over your salad.
