This has been our summer of road trips. We just returned from an enjoyable long weekend in the Finger Lakes region in central New York, celebrating my sister and brother-in-law’s anniversary. The area offers boating, wineries, breweries and some great dining. Since we were in the area, we also drove through the campus of Cornell University which was beautiful. Tomatoes are in their prime right now so this recipe by Tieghan of Half Baked Harvest for Marinated Cherry Tomatoes with Burrata + Toast is perfect timing. Since you will be enjoying the best tomatoes, make sure you purchase a high quality crusty bread! I agree with Tieghan. It’s suppose to be an appetizer but for me this is the perfect lunch!
