This is our first full week in the new year and I couldn’t be more excited to have some normalcy back in my schedule. I love being home and am excited to roll my sleeves up and tackle some of my new year’s resolutions.

Picking Out Fabric Like a Designer
Are you getting ready to re-decorate? I am still working on my redecorating project that I started in the fall. I am looking for fabric to have roman shades made for my kitchen windows. I found this timely article in Veranda Magazine, Picking Out Fabric like a Designer.
To me, picking out fabric is almost as bad as picking out paint. The good thing about picking out paint is that they can’t tell you it’s discontinued! Paint colors can be matched. I picked out a new fabric for my kitchen windows only to find out it was no longer available. Haven’t found one I like as much as that discontinued one so I am still on the hunt!

America’s Best Road Trips
This article is perfect timing with gas prices so low. Travel & Leisure Magazine has shared 29 Road Trips worth taking in the U.S. I have traveled the Pacific Coast Highway both to and from LA to San Francisco. I much prefer going north as I didn’t like being on the edge of the cliff driving south. The scenery is breathtaking! How many of these road trips have you been on? Any that you highly recommend?
Spaghetti Squash Lasagna Boats
I just picked up two spaghetti squash at Costco the other day. I think the squash tastes bests if it is roasted; however, I find it very difficult to cut. I now have a great way to prepare it. I prick the squash with a knife several times and cook in the microwave for approximately 5 minutes (more or less depending on the size). The skin will soften a bit so it is easier to cut in half and scoop out the seeds. I then place the squash cut side down on a parchment lined baking sheet and roast until caramelized.
I found this recipe for Spaghetti Squash Lasagna Boats at Skinny Taste. It looks delicious yet is diet friendly for my healthy eating resolution. I am going to make this tonight.
