Breakfast food beyond cereal and oatmeal is great for dinner. The recipes are usually quick to cook and on the healthy side. I have a few go-to recipes that can help me put Breakfast for Supper on the table in less than 20 minutes.
Eggs Benedict with Asparagus
I never seem to have time to make a nice breakfast on the weekend. Now that the weather is warmer, we want to be out in the yard before it gets too hot. On Sundays we like to relax with coffee and the paper before going to church. That’s why these Eggs Benedict with Asparagus are the perfect Breakfast for Supper food. Lauren with Tastes Better from Scratch put a twist on traditional Eggs Benedict by adding the asparagus, one of my husband’s favorite vegetables.
Shakshuka with Harissa
If you like spicy this recipe is for you! If you prefer a more mild dish, just adjust the ingredients accordingly. Shakshuka is a Middle Eastern/Moroccan dish that is simply eggs baked in a spicy tomato sauce. The one rule is that you must have some crusty bread to dip in the delicious sauce! Note: The recipe calls for Harissa which is a traditional Moroccan red pepper sauce. A great one is Mina by Casablanca Foods. It comes in spicy or mild versions, with 6 simple all natural ingredients; red chili pepper, red bell pepper, garlic, extra virgin olive oil, vinegar, salt. It’s delicious!
Anything Goes Easy Frittata
What I love about Frittatas is that anything goes! Whatever vegetables and cheese that you have on hand will pair well with eggs and create a delicious frittata. This is a great way to clean out your fridge.
I especially like making Frittatas in the summer when I have fresh herbs in my garden. A side fruit salad and some toast is all you need to round out this Breakfast for Supper menu.
