My family lives two hours away. When we have a large gathering, we all contribute and offer to bring an appetizer or dessert to help out whoever is hosting the party. For our last get together, I volunteered to bring an appetizer. It’s a bit complicated for me. I am not only traveling but often times I go up a day or two before the party. I need something that is easy to assemble and transportable.
When taking food to a party, I try not to make anything that will require the oven. You don’t know what the host is preparing and if there will be room to heat up your dish. It’s best to take something that can be served at room temperature.
Colorful Antipasto Skewers
These colorful antipasto skewers were a hit at my family party and so easy to assemble. I took the ingredients with me and assembled them at my sister’s house before heading to the party. Most antipasto platters have similar ingredients but often times they are just loosely served on a platter. I thought I would try serving them on skewers to makes it easier for each guest to take one versus spooning six different ingredients on to their plate.
You can vary the antipasto recipe according to your taste.
I garnished the center with leftover basil and grape tomatoes.
Antispasto Skewer Ingredients
Hard Salami Roll, sliced into chunks
Marinated Artichokes, drained
Pitted Large Black Olives, drained
Grape Tomatoes
Fresh Basil
Mozzarella Balls
The presentation looks its best when you assemble the ingredients in the same order on the skewers. These antipasto skewers may be assembled a few hours in advance. You can serve them room temperature.
