For Lovers of Lemon Juice

I love lemon juice.  I love it in salad dressings, entrées, desserts and beverages!  Lemon juice is so refreshing, it’s one of my favorite ingredients to use in cooking.  If you feel the same, you will love this tip.

Fresh Lemon Juice

I buy a large bag of lemons and juice them all at once.   They are always a great price at Costco but most grocery stores sell them by the bag as well. Juicing my lemons is fast and easy with my electric juicer.

Freezing Lemon Juice

Once I have juiced all my lemons, I then pour the juice in small jars.  I save pimento jars and spice jars which are the perfect size.   I freeze the jars and pull them out as needed for recipes.  The jars are small and don’t take long to thaw on the counter.  If in a rush, I’ll give the thawing process a quick start in the microwave, uncovered for 15 seconds.

Tip:  Leave at least one half inch at the top for room for expansion

 Zest Lemons Before Juicing

If you are a baker or have other recipes that call for lemon zest, you can zest the lemons before juicing.  You can store the lemon zest in waxed paper in a sealed Ziploc bag.

How to Store Fresh Lemons to Last a Month

I also found a great tip from The Kitchn.  If you prefer to keep your lemons whole, you can store them for a month in a plastic bag in the fridge.
