One of the best parts of making an extra-large turkey for Thanksgiving are the leftovers. I try to remind myself that as I pick up the 22 lb. bird! I like to make homemade broth for soups and use the meat for turkey sandwiches and casseroles.
The other day I shared a recipe for homemade turkey broth. It’s so much better than store-bought.
I love using leftover turkey in Turkey Tetrazzini and Turkey Pot Pie. Comfort food at it’s best. But today’s post is about turkey sandwiches.
Flavorful Turkey Sandwiches
One of the easiest uses for leftover turkey are sandwiches. If you are like me, I need to change it up a bit or I get tired of the same thing.
Following are four great sandwiches to make with your leftover turkey. The first three are similar to my favorite sandwiches, the Cubano, a Reuben and a Club sandwich.
Roast Turkey Cubano Sandwich
The typical Cubano sandwich is made with ham, roasted pork, Swiss cheese, pickles and mustard. Swap the roasted pork for your turkey in this version from Closet Cooking.
Turkey Club
Make some extra bacon Thanksgiving morning for turkey club sandwiches the next day. I like to bake my bacon in the oven. If you haven’t tried that click on the link. It is so easy and not messy like frying.
These club sandwiches from Oh Sweet Basil also use cranberry sauce. They look delicious!
The Rachel Sandwich – Turkey Reuben
This turkey reuben from the Martha Stewart Show uses creamy coleslaw instead of sauerkraut. I love variety so I’d like to try these.
Turkey Sandwiches With Apples and Walnut Mayo
If you want a healthier sandwich, this turkey sandwich found at Real Simple may be of interest. They upgraded store-bought mayo by mixing in Dijon mustard, walnuts, and parsley. Add a few drops of hot sauce for a fiery kick.

I’ll have a Turkey Club on wheat, please. Actually, I make something similar to this using cranberry, walnut bread from Whole Foods and a cranberry jalapeno relish. So good.
