I can’t get enough of tomatoes when they are fresh and in season! I am anxiously awaiting my neighbor’s Roma Tomatoes. He will be picking them this weekend and delivering a huge basket to me. I am a lucky neighbor! When I roast them they are absolutely addictive (see below for recipe).
My brother-in-law also has a fabulous garden with a variety of different tomatoes. I can’t wait for next weekend when he will generously share his tomato crop with me.

Last year I shared a post on How to Slow Roast Tomatoes. I’ve said it before and I will say it again. These. Are. Addictive. I can truly eat a whole tray as soon as they come out of the oven. They caramelize and are so sweet and delicious. If you can restrain yourself, there are so many recipes that you can use them in from pasta, salads, bruschetta and more.
In my opinion, the only decision you should make when it comes to a BLT is whether to slice your sandwich on the diagonal or into rectangles. BLT’s are best made on toasted white bread and the simple ingredients of crispy bacon, lettuce, fresh summer tomatoes and mayonnaise. This is one of our favorite ways to enjoy delicious summer tomatoes.
