While shopping at Trader Joe’s last year, I came across a sign on a basket of delicata squash saying “Try Me”. I am always up for trying new vegetables so I bought some of these striped squash.
A few things to point out. The skin is edible so no peeling is required. Because of that, delicata squash is easier to cut than butternut squash.
They are so easy to prepare. You just need to slice them in half, remove the seeds and slice in 1/2 inch slices.
Place the sliced squash on a baking sheet lined with parchment paper.
Lightly brush with olive oil and season with salt and pepper. You can also season with cinnamon, nutmeg or whatever other spices you like.
Roast in a preheated 400 degree oven for approximately 30 minutes or until golden brown and soft.
I like serving the roasted delicata squash as a side dish and also like adding them to pasta with some Italian sausage and onions. Add some grated parmesan and crushed red pepper and you have a delicious easy supper.
The roasted delicata squash also makes a delicious healthy appetizer. You can serve them hot as soon as they come out of the oven. I would add some extra sea salt if serving as an appetizer.

I just tried it for the first time last night. I used olive oil, salt and pepper. Hubby did not like the skin on but I thought it was good, although putting it in pasta with sausage and onions sounds very good.
