Easy and Delicious Lemon Ice Cream Dessert
I had this delicious lemon dessert at my aunt’s house one summer. She had me at the word “lemon”! It was so refreshing and when I found out how easy it was, it became my go-to recipe for summer entertaining. I love desserts that don’t require the oven during the hot summer months.
I was surprised at how simple it was with just four ingredients. You can adjust the quantities by how many people you are serving.
Lemon Dessert Ingredients:
Vanilla Ice Cream, Softened
Cool Whip, Thawed in the fridge
Lemon Curd (sold in jars in the baking section of your
grocery store)
Limoncello (an Italian lemon liqueur)
Place the vanilla ice cream in a bowl and let sit till soft.
Add an equal amount of thawed cool whip to the ice cream.
Stir in lemon curd. The amount you will use will be according to your taste and how tart you would like it. Start with a couple of tablespoons and add to it as desired.
Lastly, add 1 or 2 tablespoons of Limoncello Liquor to give it a kick!
Pour the ice cream mixture into parfait or champagne glasses or other dessert bowls. Place in the freezer for a minimum of two hours before serving.
Serving Suggestions:
Remove from freezer 10-15 minutes before serving. Garnish with fresh mint leaves, fresh fruit such as raspberries or a lemon slice.
This is so refreshing and light and it can really be served all year-long!
