One of my favorite summer desserts is a fruit crisp. Today I am sharing my delicious blueberry crisp recipe; however, I love all crisps including plum, peach and apple.
The perfect crisp has a sweet cookie like topping over a bubbly juicy fruit base. Add a scoop of vanilla ice cream and you will have one of the best summer desserts ever!
Blueberry Crisp Preparation Tips
My two must have ingredients are lemon juice and cinnamon. The lemon juice adds a little tartness to the sweet blueberries as the topping is sweet. The cinnamon adds a wonderful aroma and a touch of spice to the streusel topping.
For ease of cleanup, spray your casserole dish with cooking spray to prevent sticking.
Instead of using a pastry cutter to mix the topping, I wear my deli gloves and use my hands to work the butter into the oatmeal mixture until it’s crumbly.
You know it’s done when the topping is golden brown and the blueberries are bubbling up on the sides.
I love the crunchy topping combined with the juicy blueberries. It’s delicious on its own but also fabulous with vanilla ice cream.
My Favorite Blueberry Crisp
- FOR THE BLUEBERRY BASE:
- 6 cups fresh blueberries, rinsed
- 3 tablespoons lemon juice
- 2 tablespoons sugar
- 3 tablespoons all-purpose flour
- FOR THE TOPPING:
- ¾ cup all-purpose flour
- ¾ cup packed brown sugar
- 1 cup old fashioned rolled oats
- 1 stick cold butter
- 1 teaspoon ground cinnamon
- FOR SERVING:
- Vanilla ice cream or Homemade Whipped Cream
- Preheat over to 375 degrees.
- Spray a 9x13 baking dish with cooking spray.
- Add blueberries to a large bowl. Sprinkle with lemon juice, cinnamon, flour and sugar. Gently toss to combine, then place berry mixture in baking dish.
- To prepare topping, add brown sugar, flour and oatmeal to a medium size bowl. Slice butter and add to bowl. Either cut in butter with a pastry cutter or use your hands until mixture is crumbly. Sprinkle topping evenly over the blueberries.
- Bake uncovered for approximately 30 minutes or until golden brown and bubbling at the edges. Cool on a wire rack for 20 minutes. Serve with vanilla ice cream or homemade whipped cream.
