Plan ahead for some leftover corned beef after St. Patrick’s Day for one of these 6 delicious recipes. Personally, I would forgo plain corned beef. Yes, it’s traditional but it’s a little too bland for my liking. However, I do love corned beef in other dishes. My favorite being a delicious reuben sandwich.
What to do with Leftover Corned Beef
You can get reuben sandwiches at deli’s and restaurants all year-long. But why not make them at home? My first recipe is Martha Stewart’s Classic Reuben. The other five recipes are a little less traditional. Reuben quesadillas and fritters? So much more interesting than boiled corned beef and cabbage in my book! Enjoy!
The Classic Reuben
Martha Stewart’s recipe for a Classic Reuben Sandwich would be my number one choice on what to do with leftover corned beef. Delicious!
Corned Beef and Cabbage Quesadillas
Corey from Family Fresh Meals created these Corned Beef and Cabbage Quesadillas that she serves with Thousand Island Dressing.
Reuben Fritters
I stumbled on this blog called Man Titlement with man-friendly recipes. These Reuben Fritters look amazing.
Corned Beef and Cabbage Chowder
This Corned Beef and Cabbage Chowder from Real Housemoms is a great way to use up leftover corned beef. Serve with some hearty rolls and a salad and you have a great casual supper.
Corned Beef Hash
My sister loves Corned Beef Hash. This one from Karrie from Happy Money Saver looks good.
