If you are hosting Easter dinner and serving ham, most likely you will end up with some leftovers.  A classic ham and cheese sandwich is always good; however, I don’t like eating the same thing over and over so I tend to look for new ways to serve leftovers.

Pasta with Ham and Peas

Rachel Ray Magazine featured a recipe for Egg Tagliatelle with Ham and Peas.  It’s similar to one of my favorite dishes, Pasta Carbonara.  Instead of crispy bacon,  the recipe calls for ham.  If  you still have family in town, this will feed a crowd.
