We all love comfort food but may not enjoy time-consuming recipes. That’s why I love these deconstructed easy versions of some of my favorite comfort foods.
Comfort Food in One Pot Meals
This post is about one-pot easy to make recipes. Basically these recipes have the same ingredients of the original versions. By turning the ingredients into a soup or casserole, you can quickly prepare dinner and still have the same flavors of the more complicated versions.
I also love one pot meals because it’s easy on the clean up process.
Freezer Meals
My husband takes his lunch to work so I am always looking for food that freezes well. These versions of the comfort food recipes are great because they freeze well. If you freeze them in smaller portions, they make great lunches. I store them in glass containers and they microwave in five minutes or less. A hot homemade lunch beats a sandwich for a cold winter day.
I also freeze meals in larger portions. By freezing two serving portions in one container, I can heat it up in the microwave while I make a salad for dinner. It is so convenient and beats take out when you are pressed for time.

Swedish Meatballs Deconstructed
Instead of forming meatballs for Swedish Meatballs, you brown ground beef and serve it casserole style with noodles. I love to experiment with recipes. Although this recipe looks delicious, I would also add some sautéed mushrooms and a little Sherry. This is a recipe that even kids will enjoy. Click on the link above for the full recipe.
Stuffed Pepper Soup
Stuffing peppers isn’t as time-consuming as the time it takes to cook the stuffed peppers. They never seem to cook in the time a recipe says. I have parboiled them to speed up the process. It’s not necessary here! Stuffed pepper soup is hearty and delicious.

Stuffed Cabbage Casserole
There are many versions of stuffed cabbage, depending on country of origin. Rolling stuffed cabbage takes a lot of time so this casserole version from Cheryl Style sounded like a perfect alternative. The recipe sounds delicious and is on my schedule to make this weekend.
The one ingredient that I would add is crushed red pepper. My husband and I love our food spicy hot and crushed red pepper would be the perfect addition to this recipe. Visit Cheryl’s site above for the full recipe.
